Ingredients
  

  • 1 cup unsalted butter softened at room temperature
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped almonds
  • 1/4 tsp salt
  • 2 tbsp granulated sugar for rolling

Instructions
 

  1. Preheat your oven to 325°F and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1/2 cup sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  3. Beat in the vanilla extract, then gradually mix in the flour and salt until a crumbly dough forms, then stir in the chopped almonds with a spatula until fully incorporated.
  4. Divide the dough in half and shape each portion into a log approximately 2 inches in diameter, then roll each log in the remaining 2 tablespoons of sugar to coat evenly.
  5. Slice each log into 1/2-inch thick rounds and place them 1 inch apart on the prepared baking sheets.
  6. Bake for 18-20 minutes or until the edges are just beginning to turn golden brown, rotating the sheets halfway through baking.
  7. Remove from oven and let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
