Beat in the vanilla extract, then gradually mix in the flour and salt until a crumbly dough forms, then stir in the chopped almonds with a spatula until fully incorporated.
Divide the dough in half and shape each portion into a log approximately 2 inches in diameter, then roll each log in the remaining 2 tablespoons of sugar to coat evenly.
Slice each log into 1/2-inch thick rounds and place them 1 inch apart on the prepared baking sheets.
Bake for 18-20 minutes or until the edges are just beginning to turn golden brown, rotating the sheets halfway through baking.
