Ingredients
  

  • 1.25 pounds fresh green beans trimmed and cut into 2-inch pieces
  • 8 ounces cremini mushrooms sliced
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon soy sauce
  • 0.25 teaspoon freshly ground black pepper
  • 1.33 cups French fried onions

Instructions
 

  1. Preheat your oven to 350°F and lightly grease a 2-quart baking dish.
  2. Bring a large pot of salted water to a boil and blanch the green beans for 5 minutes until bright green and tender-crisp, then drain and set aside.
  3. Melt the butter in a large skillet over medium heat and sauté the mushrooms for 5-7 minutes until softened and golden brown.
  4. Sprinkle the flour over the mushrooms and cook for 1 minute while stirring constantly to form a paste, then slowly whisk in the chicken broth, heavy cream, soy sauce, and black pepper until the sauce thickens and bubbles, about 5-7 minutes.
  5. Gently fold the blanched green beans into the creamy mushroom sauce until evenly coated, then transfer the entire mixture to your prepared baking dish.
  6. Bake uncovered for 25 minutes, then remove from oven and evenly sprinkle the French fried onions over the top. Bake for 5 more minutes until the onions are golden and the casserole is bubbly around the edges.
